Sherry is one of my favourite wines. There’s an old Andalusian adage that goes: fino and manzanilla if it swims, amontillado if it flies, and oloroso if it walks. I keep returning to this world class mellow bone dry, rich, caramel, nutty oloroso sherry – developed without recourse to flow – as its’ staggeringly good, amazingly priced and a treat for many kinds of dishes. It will make a great foil for venison dishes, hot game pie, pan-fried Barbary duck, game pates, braised rabbit, roast goose/game birds and braised pheasant. It’s equally astonishing with kippers, meaty curries (eg tandoori chicken), jamon iberico, nuts Gruyere and Tomme de Savoie. Full-bodies, very classy and delicious. Give it a whirl!
